For the love of peanut butter, maple syrup, and rolled oats.

Today I would like to talk about 3 of my favourite food ingredients – Peanut butter, maple syrup and rolled oats. I love these food ingredients not only for their versatility, but also for their flavour and their ability to help me get through tough days. What can I say, some people love chocolate, ice cream or pizza, I’m just a little different…?

You may be thinking, OMG, COVID-19 isolation has gotten to her, but it really hasn’t. If anything, it has helped me appreciate these things even more. One thing I have been doing a lot of is baking. It’s a great activity to do with the kids on cold or wet days, and it produces an enjoyable, consumable, non clutter creating outcome. In doing all of this baking and food making, I have noticed just how often I use these three items and how many recipes I have that call for all three of these items.

To start with, I love Peanut Butter!! Like love, love it. I have been known to walk around with a spoonful of peanut butter as a snack, nothing else. Interesting fact, I do not like peanuts. Weird, I know, but I don’t like finding peanuts in my roasted nut mix, trail mix, or other food. For me to like peanuts, they have to be in mashed up butter form. I guess it’s kind of like loving grapes but not raisins, plums but not prunes, dried cranberries but not cranberry sauce.

Next there is maple syrup. Who doesn’t like maple syrup?!? Not only is it sweet, warm tasting, and delicious, but it’s vegan, and natural. It too, can be eaten by the spoonful, or on pancakes, oatmeal, used to sweeten baked goods, etc.

Finally, rolled oats. Rolled oats make cookies feel like a legitimate meal, they don’t always have to be cooked, and they are very filling. Then there is the whole, low glycemic index bit, which makes desserts feel healthy when oats are added. ¤

If I am ever in a rush, I have been known to combine peanut butter and maple syrup in a bowl, then mix in some rolled oats with a dash of cinnamon, and call that breakfast or a post run snack. It feels like dessert, but it also feels healthy as well.
